You are looking for Business Statistics Software. I do not know of any, but we used Excel to calculate this in college. It takes more work because you have to include many factors that play into downtime and uptime, off days, sick, raw materials, cost, and salary. I would suggest calculating this from top down per department. How much material is shipped to each department in 24 hours, how much completed products are completed, and what they have in inventory to complete the projects.
