Before a purchase decision is made, people tend to type multiple searches, some searches can even search up to a dozen times before making a decision! (this is off and online)

You should ideally come up for all these phases so you can gain interest from the user, if they see your webiste come up for "interest, research, purchase" you will gain a lot more trust from the searcher. The purchase phase searches tend to be more specific than those in the interest and research.
Remember that search engines analyse patterns on your website to determine the focus of your content, it does not just come and count the amount of times a phrase is entered within your content pages and titles.
SEO is not a quick fix for your website it needs to be controlled and monitored every month.
If you build a solid site with great content, this will attract good quality links and over time it will become easier to rank for more competitive terms, however, if you get a good layout and the long tail right you will set that stage for future rankings.
